I think that you should first explore the area in question a little bit to get the idea of how big your map is going to be. Then, you should leave a few inches space between each location for any new locations you may find later on. If your paper isn't big enough, then make multiple maps. For example, if I wanted to map out Llagimlyn, I would make a map for the town, a map for the area around the castle, and a map for the keep. However, there isn't a situation that I've come across that a map is absolutely necessary, except the garden maze in Brackley Hall, where you a provided a map anyways.
