 Heh.  If you've ever wondered why cafeteria food can waver so much between "awful" and "this-is-actually-good-today," just consider that the typical ingredient list for an industrial-size recipe may read something like,
 
 22 bags of flour
 7 large tubs margarine
 90 eggs
 8 gallons milk
 .
 .
 etc.
 
 So you never know what might happen if certain ingredients are in short supply one day. ;-)
