Origin of the Beefhead?

Ok, so "beefheads" have now appeared in at least three of the games at Rinkworks (Enchanted Forest, Fantasy Quest 2 and Murkon's Refuge, somebody tell me if I missed one). Has there been any discussion anywhere on what exactly these things are and where they came from? Did Sam just make them up to be goofy, or is there a story behind it?
